Zucchini Quiche

1 pre-made pie crust (store-bought or homemade)

3 medium zucchinis, thinly sliced

1 medium onion, finely chopped

2 cloves garlic, minced

4 large eggs

1 cup heavy cream or half-and-half

1 cup shredded cheddar cheese

1 cup fresh spinach, chopped

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

Optional: 1/4 cup grated Parmesan cheese for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Pie Crust: Place the pre-made pie crust in a 9-inch pie dish. Pierce the bottom with a fork to prevent bubbling. Pre-bake the crust for 10 minutes, then set aside to cool.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute, until fragrant. Next, add the sliced zucchini and cook for 5-7 minutes, until slightly tender. Stir in the chopped spinach and thyme, cooking until the spinach wilts. Remove from heat and let cool slightly.

        Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, heavy cream (or half-and-half), salt, and black pepper until well combined.

          Assemble the Quiche: Spread the sautéed vegetable mixture evenly over the bottom of the pre-baked pie crust. Pour the egg mixture over the vegetables, ensuring everything is evenly distributed. Sprinkle the shredded cheddar cheese on top. If you’re using Parmesan cheese, add it as well.

            Bake: Bake in the preheated oven for 35-40 minutes, or until the quiche is set in the center and lightly golden on top. A knife inserted in the center should come out clean.

              Cool and Serve: Allow the quiche to cool for about 10 minutes before slicing. Serve warm or at room temperature.
