2 medium zucchinis

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon crushed red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut them in half lengthwise, then scoop out some of the flesh with a spoon to create a small boat, leaving about ¼ inch thick on the bottom. This will help hold the toppings.

      Season the Zucchini: Place the zucchini halves on the baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and onion powder. Bake the zucchini for about 10-12 minutes until slightly softened.

        Add Sauce and Cheese: Remove the zucchinis from the oven. Spoon marinara sauce evenly into each zucchini boat. Then, sprinkle shredded mozzarella cheese on top, followed by grated Parmesan cheese. Finish with a sprinkle of Italian seasoning and crushed red pepper flakes if using.

          Bake Again: Return the zucchini pizza bites to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the edges of the zucchini are lightly caramelized.

            Garnish & Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm as a delicious appetizer or snack!
