2 medium zucchinis, sliced into 1/2-inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon Italian seasoning

Salt and pepper, to taste

Olive oil spray (or 2 tablespoons olive oil)

Marinara sauce, for dipping (optional)

Fresh basil or parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: In a large bowl, toss the zucchini slices with a pinch of salt and let them sit for about 10 minutes. This will help to draw out excess moisture.

      Make the Coating Mixture: In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well until fully combined.

        Prepare the Egg Wash: In another bowl, whisk the eggs until they are well beaten.

          Coat the Zucchini Rounds: Pat the zucchini slices dry with a paper towel. Dip each slice first into the egg wash, allowing the excess to drip off, then coat them in the breadcrumb mixture until evenly covered.

            Arrange for Baking: Place the coated zucchini rounds onto the prepared baking sheet in a single layer. If using olive oil, lightly spray or drizzle the tops of the zucchini with olive oil for extra crispiness.

              Bake: Bake in the preheated oven for 15-20 minutes, flipping halfway through, until the poppers are golden brown and crispy.

                Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh basil or parsley. Serve warm with marinara sauce for dipping if desired.
