2 medium zucchinis, sliced into thin rounds

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and black pepper, to taste

1 cup refried beans (canned or homemade)

1 cup shredded cheddar cheese (or dairy-free alternative)

1/2 cup diced tomatoes

1/2 cup sliced black olives

1 jalapeño, thinly sliced (optional)

1/4 cup green onions, chopped

1/4 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, diced (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini Chips:

      - Place the sliced zucchini rounds in a large bowl.

        - Drizzle with olive oil, add smoked paprika, garlic powder, salt, and black pepper. Toss until evenly coated.

          Bake the Zucchini:

            - Spread the zucchini rounds on a baking sheet lined with parchment paper in a single layer.

              - Bake in the preheated oven for about 15 minutes, or until they're slightly golden and tender.

                Assemble the Nachos:

                  - Once the zucchini is baked, remove them from the oven and layer half of the rounds on a large oven-safe plate or baking dish.

                    - Spread half of the refried beans over the zucchini, followed by half of the cheddar cheese, diced tomatoes, black olives, and jalapeños.

                      - Repeat the layers with the remaining zucchini, beans, cheese, tomatoes, olives, and jalapeños.

                        Melt the Cheese:

                          - Place the assembled nachos back in the oven and bake for an additional 10 minutes, or until the cheese is bubbly and melted.

                            Garnish and Serve:

                              - Once out of the oven, remove the nachos and sprinkle chopped green onions, diced avocado, and fresh cilantro over the top.
