3 medium zucchinis, sliced lengthwise into thin strips

2 cups ricotta cheese

1 cup grated mozzarella cheese, divided

1 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Olive oil for brushing

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini Strips: Using a mandoline or a vegetable peeler, slice the zucchinis lengthwise into thin strips (about 1/8 inch thick). Lay them out on paper towels, sprinkle lightly with salt, and let them sit for about 15 minutes to draw out moisture. Pat dry with a paper towel.

      Make Ricotta Mixture: In a bowl, combine the ricotta cheese, half of the mozzarella cheese (1/2 cup), Parmesan cheese, egg, minced garlic, dried basil, oregano, salt, and pepper. Mix until well combined.

        Assemble Roll Ups: Spread a thin layer of marinara sauce on a baking dish to coat the bottom. Take one zucchini strip, place 1-2 tablespoons of the ricotta mixture at one end, and roll it up tightly. Place the roll seam side down in the baking dish. Repeat this process until all zucchini strips and ricotta mixture are used.

          Pour Sauce: Once the roll ups are placed in the dish, pour the remaining marinara sauce over the top, covering all the roll ups. Sprinkle the remaining mozzarella cheese on top.

            Bake: Lightly brush the top with olive oil and cover the baking dish with aluminum foil. Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 15 minutes, or until bubbly and the cheese is melted.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
