2 medium zucchinis, grated

1/2 teaspoon salt

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese

2 green onions, finely chopped

2 large eggs

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon paprika

Olive oil, for frying

Fresh parsley, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions
 

Begin by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and sprinkle with salt. Let it sit for about 10 minutes to draw out moisture.

    After 10 minutes, twist the towel to squeeze out excess liquid from the zucchini until it feels mostly dry. This step is crucial to ensure your fritters are crispy.

      In a large mixing bowl, combine the drained zucchini, flour, Parmesan cheese, green onions, eggs, black pepper, garlic powder, and paprika. Mix until all ingredients are well combined. The mixture should hold together; if it's too wet, add a bit more flour.

        Heat about 2 tablespoons of olive oil in a large skillet over medium heat.

          Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture to form each fritter and gently flatten it with the back of a spatula. Fry the fritters in batches, making sure not to overcrowd the skillet.

            Cook for 3-4 minutes on each side, or until golden brown and crispy. Add more oil as necessary between batches.

              Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.
