12 large cremini or portobello mushrooms

1 medium zucchini, finely diced

1 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 teaspoon red pepper flakes (optional)

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for drizzling)

Balsamic glaze (for drizzling, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth. Remove the stems and finely chop them, setting aside the caps.

      Cook the Zucchini: In a medium skillet over medium heat, add a drizzle of olive oil. Add the chopped mushroom stems and diced zucchini. Sauté for about 5-7 minutes until the zucchini is tender and excess moisture has evaporated.

        Mix the Filling: In a mixing bowl, combine the sautéed zucchini and mushroom stems, feta cheese, cream cheese, minced garlic, fresh parsley, red pepper flakes, oregano, salt, and black pepper. Stir until well combined.

          Stuff the Mushrooms: Gently fill each mushroom cap with a generous spoonful of the filling mixture, pressing lightly to ensure it holds.

            Arrange and Drizzle: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle with a touch of olive oil over the top for added flavor.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is slightly golden.
