12 oz (340g) pasta (penne or rigatoni)

2 medium zucchinis, thinly sliced

2 cups cherry tomatoes, halved

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Preheat the oven: Begin by preheating your oven to 375°F (190°C).

    Cook the pasta: In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain the pasta and set aside.

      Sauté the zucchini: In a large skillet, heat the olive oil over medium heat. Add the sliced zucchinis and sauté for about 5-7 minutes until they are tender and start to caramelize. Add the minced garlic, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Sauté for an additional 1-2 minutes until fragrant.

        Combine the ingredients: In a large mixing bowl, combine the cooked pasta, sautéed zucchini mixture, halved cherry tomatoes, crumbled feta, and half of the shredded mozzarella. Toss everything together until well combined.
