2 medium zucchinis, grated (about 1.5 cups)

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsweetened applesauce

1/2 cup butter, melted

1 large egg

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 cup chopped walnuts (optional)

1/2 cup chocolate chips or raisins (optional)

Pinch of salt

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13 inch casserole dish or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. To remove excess moisture, place the grated zucchini in a clean kitchen towel, twist it, and wring out the liquid. This will help prevent the casserole from becoming too soggy.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, granulated sugar, applesauce, egg, and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, mix the flour, oats, baking soda, baking powder, cinnamon, nutmeg, and a pinch of salt. If using walnuts and/or chocolate chips, fold them into the dry mixture now.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the grated zucchini until evenly distributed throughout the batter.
