2 medium zucchinis, grated

1 tablespoon olive oil

1 tablespoon unsalted butter

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon sea salt

¼ teaspoon black pepper

¼ cup cream cheese, softened

2 tablespoons grated Parmesan cheese

Juice of ½ lemon

Fresh chives for garnish (optional)

Instructions
 

Begin by grating the zucchinis. To remove excess moisture, place the grated zucchini in a clean kitchen towel and squeeze out the liquid until they are mostly dry.

    In a large skillet over medium heat, add the olive oil and butter. Once melted, sauté the finely chopped onion for about 5 minutes or until translucent.

      Add the minced garlic to the skillet, and continue to sauté for another minute until fragrant.

        Stir in the grated zucchini, thyme, sea salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the zucchini is tender and has released most of its moisture.

          Remove the skillet from heat and allow the mixture to cool slightly.

            Once cooled, transfer the zucchini mixture to a food processor. Add the softened cream cheese, grated Parmesan, and lemon juice. Blend until smooth and creamy, scraping down the sides as needed.

              Taste and adjust seasoning if necessary, adding more salt or lemon juice to achieve your desired flavor.

                Transfer the zucchini butter spread to a serving bowl, and chill in the refrigerator for about 30 minutes to firm up.

                  Serve the Zucchini Butter Bliss spread on crusty bread, crackers, or fresh veggies. Garnish with chopped chives if desired. Enjoy!
