2 medium zucchinis, grated

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 large eggs, beaten

2 garlic cloves, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray (for greasing)

For the Marinara Dip:

2 cups marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

Fresh basil leaves (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Zucchini: In a large mixing bowl, combine the grated zucchini with a pinch of salt and let it sit for about 10 minutes. This process will draw out excess moisture from the zucchini.

      Squeeze Out Moisture: After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much moisture from the zucchini as possible.

        Mix Ingredients: In the same bowl, add the breadcrumbs, Parmesan cheese, mozzarella cheese, beaten eggs, minced garlic, Italian seasoning, salt, and black pepper. Mix everything together until well combined.

          Form Bites: Using your hands, form the mixture into small bite-sized patties or balls, about 1-2 inches in diameter. Place them on the prepared baking sheet, spacing them out evenly.

            Spray with Oil: Lightly spray the tops of the zucchini bites with olive oil to help them crisp up in the oven.

              Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the bites are golden brown and crispy.
