1 lb fresh salmon fillet, skin removed, cut into 1-inch cubes

2 tablespoons olive oil

Zest of 1 large orange

1/4 cup fresh orange juice

2 tablespoons honey

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and black pepper, to taste

Skewers (if using wooden skewers, soak in water for 30 minutes before use)

Fresh cilantro, for garnish

Extra orange zest for garnish

Prepare the Marinade: In a medium bowl, combine the olive oil, orange zest, orange juice, honey, grated ginger, minced garlic, soy sauce, apple cider vinegar, and red pepper flakes. Mix well until all ingredients are well combined.

    Marinate the Salmon: Place the salmon cubes into a zip-top bag or a shallow dish. Pour the marinade over the salmon, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

      Preheat the Grill: If using an outdoor grill, preheat it to medium-high heat. If using an indoor grill pan, heat it over medium-high heat and lightly grease with cooking spray or oil.
