1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes

Zest and juice of 2 large oranges

1 tablespoon fresh ginger, minced

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

Fresh cilantro, chopped (for garnish)

Skewers (wooden or metal)

Instructions
 

Marinate the Salmon: In a mixing bowl, combine the orange zest, orange juice, minced ginger, honey, soy sauce, sesame oil, minced garlic, rice vinegar, and red pepper flakes. Whisk until well combined.

    Prepare the Salmon: Add the salmon cubes to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour to allow the flavors to meld.

      Soak Skewers (if using wooden skewers): If you're using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

        Assemble the Skewers: After marinating, remove the salmon from the fridge. Alternate threading the marinated salmon, red bell pepper, green bell pepper, and red onion onto the skewers, creating vibrant layers.

          Preheat the Grill: Heat your grill or grill pan to medium-high heat. Ensure it’s well-prepared and lightly oiled to prevent sticking.

            Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly charred.

              Garnish and Serve: Remove the skewers from the grill and let them rest for a minute. Sprinkle with fresh chopped cilantro and serve with additional orange wedges on the side for a fresh touch.
