Ingredients

2 cups raw unsalted peanuts

2 tablespoons olive oil

Zest of 1 lime

2 tablespoons fresh lime juice

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon cayenne pepper (adjust for spice preference)

1 tablespoon brown sugar (optional, for a hint of sweetness)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Peanuts: In a large mixing bowl, combine the raw peanuts and olive oil. Toss them well to ensure they are evenly coated.

Mix Seasonings: In a separate small bowl, mix together the lime zest, lime juice, chili powder, smoked paprika, garlic powder, sea salt, cayenne pepper, and brown sugar (if using). Stir until well combined.

Season the Peanuts: Pour the seasoning mixture over the peanuts. Toss thoroughly until each peanut is evenly coated with the spice mixture.

Spread on Baking Sheet: Transfer the seasoned peanuts onto the prepared baking sheet, spreading them out in a single layer to ensure they roast evenly.

Roast the Peanuts: Bake in the preheated oven for 15-20 minutes, stirring halfway through to ensure even roasting. Keep a close eye on them around the 15-minute mark, as they can burn quickly. They are done when they are golden brown and fragrant.

Cool Down: Once roasted, remove the peanuts from the oven and let them cool on the baking sheet for about 10 minutes. They will become crispier as they cool.

Serve & Enjoy: Serve these zingy chili roasted peanuts as a snack, appetizer, or party treat! They're sure to be a hit with their zesty, spicy flavor. Store leftovers in an airtight container at room temperature for up to one week.
