Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

3 tablespoons lime juice (freshly squeezed)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon sea salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for heat)

Zest of 1 lime

For the Coconut Rice:

1 cup jasmine rice

1 cup coconut milk (full-fat for creaminess)

1 cup water

1 tablespoon sugar

½ teaspoon salt

For the Toppings:

1 ripe avocado, sliced

½ cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Sliced jalapeños, for heat (optional)

Instructions

Marinate the Shrimp: In a medium-sized bowl, combine the shrimp, lime juice, olive oil, garlic powder, paprika, sea salt, black pepper, red pepper flakes (if using), and lime zest. Mix well to ensure the shrimp are evenly coated. Cover and set aside to marinate for 15-20 minutes.

Prepare the Coconut Rice: In a medium saucepan, combine the jasmine rice, coconut milk, water, sugar, and salt. Stir well to combine. Bring the mixture to a gentle boil over medium heat.

Cook the Rice: Once boiling, reduce the heat to low, cover, and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes before fluffing with a fork.

Cook the Shrimp: While the rice is resting, heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer (you may need to do this in batches). Cook for 2-3 minutes per side until the shrimp are pink, opaque, and cooked through. Remove from heat.

Assemble the Bowls: In each bowl, add a generous serving of coconut rice as the base. Top with the cooked shrimp, sliced avocado, cherry tomatoes, and a sprinkle of fresh cilantro.

Add Final Touches: Serve with lime wedges on the side for extra zest. If desired, garnish with sliced jalapeños for an added kick.

Enjoy Your Meal! Dive in and enjoy the vibrant flavors of the sea and coconut in each delicious bite.
