1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

Zest and juice of 2 limes

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup jasmine rice

2 cups low-sodium chicken broth

Zest of 1 lime

Salt to taste

For the Cilantro Dressing:

1/4 cup fresh cilantro, finely chopped

1/4 cup Greek yogurt

1 tablespoon lime juice

Salt and pepper to taste

For Garnish:

Additional lime wedges

Marinate the Chicken: In a large bowl, combine olive oil, lime zest, lime juice, minced garlic, cumin, chili powder, salt, and pepper. Add the chicken thighs and ensure they are well coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring the chicken broth to a boil. Add the rinsed rice, lime zest, and a pinch of salt. Stir, reduce heat to low, cover, and cook for 15-18 minutes or until the liquid is absorbed and rice is tender. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

      Prepare the Cilantro Dressing: In a small bowl, mix the chopped cilantro, Greek yogurt, lime juice, salt, and pepper until smooth. Adjust seasoning to taste and set aside.
