Zesty Lemon Greek Chicken

4 boneless, skinless chicken breasts

1/4 cup olive oil

1/4 cup fresh lemon juice (about 2 lemons)

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lemon

1 cup cherry tomatoes, halved

1/2 red onion, sliced

1 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, pepper, and lemon zest until well combined.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes (up to 4 hours for added flavor).

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Prepare a Baking Dish: In a large baking dish, add the cherry tomatoes, red onion slices, and Kalamata olives. Toss gently to combine.

          Add the Chicken: Remove the chicken from the marinade and let any excess drip off. Place the chicken breasts on top of the vegetable mixture in the baking dish.

            Bake: Bake in the preheated oven for approximately 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The vegetables should be tender, and the tomatoes will start releasing their juices.

              Add the Feta: In the last 5 minutes of cooking, sprinkle the crumbled feta cheese over the chicken and vegetables and return to the oven until heated through.

                Garnish and Serve: Once done, remove from the oven, and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
