Marinating the chicken is a crucial step in this recipe that greatly enhances the overall flavor of the quesadillas. Allowing the chicken to soak in the BBQ sauce and spices not only tenderizes the meat but also allows the flavors to meld together, creating a rich and savory profile. Aim for a marination time of at least 30 minutes; however, if you can plan ahead, marinating for several hours or even overnight will yield even more pronounced flavors. Use a resealable plastic bag or a shallow dish to ensure the chicken is evenly coated.

Ingredients

2 cups cooked shredded chicken

1 cup BBQ sauce (your favorite brand)

1 cup fresh corn kernels (or canned, drained)

1 cup shredded cheese (cheddar or a blend of mozzarella and pepper jack)

4 large flour tortillas

1 small red onion, finely chopped

1 cup fresh cilantro, chopped

1 teaspoon lime juice

1 tablespoon olive oil (for cooking)

Salt and pepper to taste

Optional: JalapeƱos for added heat

Instructions

Marinate the Chicken: In a mixing bowl, combine the cooked shredded chicken with BBQ sauce. Mix well to coat the chicken evenly. Set aside for 10 minutes to allow flavors to meld.

Prepare the Filling: In a separate bowl, combine the fresh corn, chopped red onion, cilantro, lime juice, and a pinch of salt and pepper. Mix until well incorporated.

Assemble the Quesadillas: Take one flour tortilla and spread a generous amount of the BBQ chicken mixture on one half. Top it with a portion of the corn mixture and sprinkle shredded cheese over the top. Fold the tortilla in half, enclosing the filling. Repeat this process for the remaining tortillas.

Cook the Quesadillas: Heat olive oil in a large skillet over medium heat. Place one quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Remove from the skillet and cut into wedges. Repeat with remaining quesadillas.

Serve: Serve the quesadillas hot with extra BBQ sauce and lime wedges on the side. You can add sliced jalapeƱos for an extra kick if desired.
