1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (14 oz) diced tomatoes with green chilies, drained

1 cup corn (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

12 taco shells

2 cups shredded cheddar cheese

1 cup salsa

1/2 cup sour cream

Fresh cilantro, for garnish

Sliced jalapeños, for optional heat

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the diced onion and garlic. Sauté until the onions are translucent, about 3-4 minutes. Add the ground beef, breaking it apart and cooking until browned, around 5-7 minutes. Drain any excess fat.

      Season: Sprinkle the taco seasoning over the beef mixture. Stir in the drained diced tomatoes, corn, and black beans, mixing well to combine. Cooking everything together for an additional 5 minutes will help enhance the flavors.

        Prepare Taco Shells: In a baking dish, arrange the taco shells upright. Spoon the zesty beef mixture generously into each shell.

          Add Cheese: Top each filled taco with an ample amount of shredded cheddar cheese, ensuring they're well covered for a melty topping.

            Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.
