1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the drained chickpeas and diced avocado. Gently toss them together to avoid mashing the avocado.

    Add in the halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped cilantro to the bowl.

      In a separate small bowl, whisk together lime juice, olive oil, ground cumin, chili powder, and a pinch of salt and pepper.

        Pour the dressing over the salad ingredients and gently fold everything together until evenly coated.

          Taste and adjust seasoning as necessary, adding more lime juice or salt if desired.
