1 cup couscous

1 1/4 cups vegetable broth

1/2 cup fresh parsley, finely chopped

1/4 cup fresh mint, finely chopped

1/4 cup fresh dill, finely chopped

1/4 cup grated Parmesan cheese (optional)

1/4 cup sun-dried tomatoes, chopped

1/4 cup toasted pine nuts

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon lemon juice

1 tablespoon olive oil

1/2 cup all-purpose flour (for binding)

1/4 cup water (as needed for texture)

Extra olive oil for frying

Prepare the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover the pot, and remove it from heat. Let it sit for about 5 minutes or until the liquid is absorbed.

    Fluff and Cool: After 5 minutes, fluff the couscous with a fork and allow it to cool for 10-15 minutes.

      Mix the Ingredients: In a large mixing bowl, combine the cooled couscous with the chopped parsley, mint, dill, Parmesan cheese (if using), sun-dried tomatoes, pine nuts, garlic powder, onion powder, salt, pepper, lemon juice, and olive oil. Mix thoroughly.

        Bind the Mixture: Gradually add the all-purpose flour, mixing until the mixture can hold together. If it's crumbly, add a little water (one tablespoon at a time) until you reach a dough-like consistency.

          Shape the Bites: Using your hands, form small balls (about 1 inch in diameter) or patties from the mixture. Place them on a plate or baking sheet.

            Heat the Oil: In a large skillet, heat enough olive oil over medium heat to cover the bottom of the pan.

              Fry the Bites: Once the oil is hot, carefully add the couscous bites in batches to avoid overcrowding. Fry them for about 3-4 minutes on each side or until golden brown and crispy. Remove and place them on a paper towel-lined plate to drain excess oil.

                Serve: Serve warm as appetizers or snack bites, garnished with a sprig of fresh herb or a drizzle of yogurt sauce.
