4 cups seedless watermelon, cubed

1 cup feta cheese, crumbled

1/2 cup fresh mint leaves, roughly chopped

1/4 cup balsamic glaze

2 tablespoons extra virgin olive oil

1 tablespoon fresh lime juice

Salt and freshly cracked black pepper, to taste

Instructions

Prepare the Watermelon: Start by cutting the seedless watermelon into bite-sized cubes. You can also use a melon baller for a fun presentation.

Combine Ingredients: In a large mixing bowl, gently combine the cubed watermelon, crumbled feta cheese, and chopped mint leaves. Be careful not to smash the watermelon.

Make the Dressing: In a small bowl, whisk together the balsamic glaze, extra virgin olive oil, and fresh lime juice. Season with a pinch of salt and a few cracks of black pepper.

Dress the Salad: Drizzle the dressing over the watermelon mixture. Toss carefully until all ingredients are evenly coated.

Serve: Transfer the salad to a serving platter or individual bowls. Garnish with additional mint leaves and a drizzle of balsamic glaze, if desired. Enjoy immediately!
