Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 package (16 oz) gnocchi (store-bought or homemade)

1 cup fresh spinach, chopped

Salt and pepper to taste

Fresh basil leaves and grated Parmesan cheese (for garnish)

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent. Stir in the minced garlic, oregano, basil, and red pepper flakes, cooking for an additional minute until fragrant.

Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth, stirring well to combine. Bring the mixture to a gentle simmer and cook for about 10 minutes, allowing the flavors to meld.

Mix in Cream and Gnocchi: Reduce the heat to low, then slowly stir in the heavy cream. Once well combined, add the gnocchi to the pot. Let the soup simmer for about 5-7 minutes or until the gnocchi floats to the top and is cooked through.

Add Spinach: Stir in the fresh spinach and cook for an additional 2-3 minutes, just until wilted. Season the soup with salt and pepper to taste.

Serve and Garnish: Ladle the soup into bowls and garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired.

Enjoy: Serve warm with crusty bread or a side salad for a complete meal.
