Ingredients

6 ripe peaches, peeled, pitted, and sliced

½ cup granulated sugar (adjust to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, melted

1 cup whole milk

½ cup brown sugar

1 teaspoon ground nutmeg

Vanilla ice cream, for serving

Instructions

Prepare the Peaches: In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, and ground cinnamon. Gently toss to coat the peaches evenly. Let them sit for about 15 minutes to macerate.

Preheat Your Oven: Preheat your oven to 350°F (175°C).

Make the Batter: In another bowl, whisk together the flour, baking powder, salt, and brown sugar. Pour in the melted butter and milk. Stir until just combined; do not overmix. The batter will be slightly lumpy, and that’s okay!

Assemble the Cobbler: Pour the batter into a greased 9x13-inch baking dish. Spoon the macerated peaches and all their juices over the batter. Do not stir—this will create a delightful layering effect.

Sprinkle Nutmeg: Evenly sprinkle ground nutmeg over the top of the peach mixture to add an aromatic depth.

Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes or until the cobbler is golden brown and bubbly. A toothpick inserted in the center should come out clean.

Cool and Serve: Once baked, remove the cobbler from the oven and let it cool slightly for about 10 minutes. Serve warm with generous scoops of vanilla ice cream on top.

Enjoy: Watch as the ice cream melts into the warm cobbler, creating the perfect cozy dessert!
