1 medium beet (about 8 oz), roasted and peeled

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons olive oil, plus more for drizzling

1 garlic clove, minced

2 tablespoons lemon juice

1/2 teaspoon ground cumin

Salt and pepper to taste

4 slices of whole grain bread (or your favorite bread)

Fresh herbs (such as dill or parsley) for garnish

Optional toppings: crumbled feta, pumpkin seeds, or sliced radishes

Instructions
 

Prepare the Beet: Preheat your oven to 400°F (200°C). Wrap the beet in foil and roast for about 45-60 minutes until tender. Once cooled, peel the skin off and set aside.

    Make the Hummus: In a food processor, combine the roasted beet, chickpeas, tahini, olive oil, minced garlic, lemon juice, cumin, salt, and pepper. Blend until smooth. If needed, add a little water to adjust the consistency to your liking.

      Toast the Bread: While the hummus is blending, toast the slices of bread in a toaster or on a grill until golden brown and crispy.
