4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 medium carrot, grated

1 small cucumber, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 small zucchini, thinly sliced

2 cups baby spinach or mixed greens

¼ cup feta cheese, crumbled (optional)

2 tablespoons fresh dill or parsley, chopped (for garnish)

Salt and pepper, to taste

Prep the Veggies: Wash and thinly slice all the vegetables. Grate the carrot and keep everything in a clean workspace for easy assembly.

    Spread the Hummus: Take one tortilla and spread about ¼ cup of hummus evenly over the entire surface, leaving a small border around the edges.
