Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 large egg

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar/lemon juice)

1 tablespoon unsalted butter, melted + extra for cooking

1 teaspoon vanilla extract

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

Prepare Wet Ingredients: In a separate bowl, beat the egg. Then add the buttermilk, melted butter, and vanilla extract. Whisk until the mixture is smooth.

Combine Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold everything together using a spatula until just combined. Be careful not to overmix; a few lumps are okay.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Add a little butter to coat the surface.

Cook the Pancakes: Once the pan is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges start to look set. Flip the pancakes gently and cook for an additional 1-2 minutes, until golden brown and cooked through.

Serve It Up: Remove the pancakes from the skillet and keep warm in a low oven while you repeat with the remaining batter. Serve with maple syrup, fresh fruit, or a dusting of powdered sugar and a sprinkle of extra cinnamon.
