20 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese, divided

1 cup cooked crab meat (or shrimp, scallops, or a mix)

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tsp lemon juice

Salt and pepper to taste

3 cups marinara sauce

1 tsp Italian seasoning

Extra parsley for garnish

Instructions
 

Cook the Pasta: Boil a large pot of salted water. Add the jumbo shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a large mixing bowl, combine ricotta cheese, chopped spinach, Parmesan cheese, ½ cup of mozzarella cheese, crab meat, minced garlic, parsley, lemon juice, salt, and pepper. Mix until well combined.

      Stuff the Shells: Preheat your oven to 375°F (190°C). Carefully stuff each cooked shell with the seafood filling, using a spoon or a piping bag for easier filling.

        Prepare the Baking Dish: Spread 1 cup of marinara sauce on the bottom of a large, greased baking dish. Place the stuffed shells in a single layer over the sauce.

          Top with Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells. Sprinkle the remaining ½ cup of mozzarella cheese on top, and finish with Italian seasoning.

            Bake: Cover the dish with aluminum foil (shiny side down) to prevent sticking. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Let the stuffed shells cool for about 5 minutes. Garnish with extra parsley before serving.
