1 tablespoon olive oil

1 packet ranch seasoning mix

1 cup diced bell peppers (any color)

1 cup shredded carrots

1 cup corn (fresh or frozen)

½ cup diced red onion

1 tablespoon minced garlic

Salt and pepper to taste

1 head of iceberg or butter lettuce (about 8 leaves)

½ cup shredded cheddar cheese (optional)

Cherry tomatoes, halved, for garnish (optional)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced red onion, sautéing for about 2-3 minutes until fragrant.

    Brown the Meat: Add the ground turkey to the skillet. Break it up with a spatula and cook until it’s browned and no longer pink, about 5-7 minutes.
