12 oz penne pasta

1 lb ground turkey

2 cups fresh mushrooms (sliced, e.g., cremini or button)

1 medium onion (finely chopped)

3 cloves garlic (minced)

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley (chopped, for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add chopped onion and garlic, cooking until the onion is translucent (about 3-4 minutes). Add the sliced mushrooms and cook until they release their liquid and begin to brown (about 5-6 minutes).

      Brown the Turkey: Push the vegetable mixture to one side of the skillet. Add the ground turkey to the other side and cook until browned, breaking it up with a spatula (about 6-8 minutes). Mix the turkey with the vegetables once cooked through.
