Tuna Tacos with Lime Slaw

For the Tuna Filling:

2 (6-ounce) cans of tuna, drained

2 tablespoons mayo (preferably light or avocado)

1 tablespoon lime juice

1 teaspoon Dijon mustard

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

For the Lime Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon honey or agave syrup

Salt and pepper to taste

For Assembly:

8 small corn tortillas

Lime wedges for serving

Extra cilantro for garnish

Instructions
 

Prepare the Tuna Filling:

    - In a mixing bowl, combine the drained tuna, mayo, lime juice, Dijon mustard, soy sauce, garlic powder, and smoked paprika.

      - Mix well until the ingredients are fully incorporated. Season with salt and pepper to taste. Set aside.

        Make the Lime Slaw:

          - In another mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, and chopped cilantro.

            - In a small bowl, whisk together the lime juice, honey, salt, and pepper. Pour this dressing over the slaw mixture and toss until everything is well coated. Adjust seasoning as needed.

              Heat the Tortillas:

                - In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until they are pliable and fragrant. Keep them warm in a tortilla warmer or wrapped in a clean kitchen towel.

                  Assemble the Tacos:

                    - On each tortilla, add a generous spoonful of the tuna filling, followed by a handful of the lime slaw.

                      - Garnish with extra cilantro and a wedge of lime on the side for squeezing.

                        Serve:
