Tuna Skewers with Mango Salsa

For the Tuna Skewers:

1 lb (450g) fresh tuna steak, cut into 1-inch cubes

2 tablespoons olive oil

2 teaspoons soy sauce

1 teaspoon sesame oil

1 teaspoon garlic powder

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

12 wooden skewers (soaked in water for 30 minutes if using bamboo)

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1 lime, juiced

2 tablespoons fresh cilantro, chopped

Salt, to taste

Marinate the Tuna: In a bowl, combine olive oil, soy sauce, sesame oil, garlic powder, grated ginger, salt, and pepper. Add the tuna cubes and gently toss to coat. Cover and marinate in the refrigerator for at least 30 minutes to 1 hour.

    Prepare the Mango Salsa: In a separate bowl, mix together the diced mango, red onion, red bell pepper, jalapeño (if using), lime juice, and cilantro. Season with a pinch of salt. Stir gently and set aside to let the flavors meld.

      Assemble the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated tuna cubes evenly onto the soaked skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Once the grill is hot, place the skewers on it. Grill for about 2-3 minutes on each side, or until the tuna is cooked to your desired doneness (it should still be slightly pink in the center for the best flavor).

          Serve: Carefully remove the skewers from the grill and let them rest for a minute. Serve the tuna skewers warm, accompanied by a generous scoop of mango salsa on the side. Enjoy!
