6 large flour tortillas

8 large eggs

1 cup milk

1 cup shredded cheddar cheese, divided

1 cup cooked black beans, rinsed and drained

1 cup diced bell peppers (any color)

1 small onion, diced

1 cup corn (fresh or frozen)

1 tsp ground cumin

1 tsp paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro for garnish (optional)

Salsa for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers. Sauté for about 5-7 minutes until the onion is translucent and the peppers have softened. Stir in the corn and cook for an additional 2 minutes. Remove from heat.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, cumin, paprika, salt, and pepper until well combined.

        Layer the Tortillas: Place 2 tortillas at the bottom of the greased baking dish, overlapping them slightly. Spoon half of the sautéed vegetable mixture over the tortillas.

          Add the Beans and Cheese: Sprinkle half of the black beans and half of the cheddar cheese over the vegetable layer.

            Repeat Layers: Add another layer of 2 tortillas, followed by the remaining sautéed veggies, remaining black beans, and another layer of cheddar. Finish with the last two tortillas on top.

              Pour Egg Mixture Over: Carefully pour the egg mixture evenly over the tortillas. Use a fork to gently poke and allow the egg mixture to seep into the layers.

                Top It Off: Sprinkle the remaining cheddar cheese atop the quiche bake.

                  Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and continue baking for another 15-20 minutes, or until the egg is set and the top is golden and bubbly.

                    Cool and Serve: Let the quiche bake cool for about 10 minutes before slicing. Garnish with fresh cilantro and serve with salsa on the side.
