Tomato Zucchini Pasta

8 oz (225g) spaghetti or your choice of pasta

2 medium zucchinis, sliced into half-moons

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup extra-virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

Salt and black pepper to taste

1/4 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese (for serving)

Zest of 1 lemon

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set the pasta aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and, sauté until fragrant (about 1 minute). Be careful not to burn the garlic.

      Add Zucchini: Add the zucchini half-moons to the skillet. Sauté for about 4-5 minutes, or until they start to soften.

        Incorporate Cherry Tomatoes: Stir in the cherry tomatoes, dried oregano, and red pepper flakes (if using). Season with salt and black pepper. Cook for an additional 5-7 minutes until the tomatoes burst and create a sauce.

          Combine Pasta and Sauce: Add the cooked spaghetti to the skillet with the sautéed vegetables. Toss together, adding reserved pasta water a little at a time to help create a light sauce until the desired consistency is reached.

            Finish with Fresh Herbs: Remove from heat, and stir in the fresh basil and lemon zest for a zesty twist. Adjust seasoning if necessary.

              Serve: Plate the pasta in serving dishes, and top with grated Parmesan cheese. Garnish with additional basil if desired.
