2 cups ripe heirloom tomatoes, sliced

2 medium ripe peaches, sliced

8 oz burrata cheese

2 cups arugula or mixed greens

ΒΌ cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and freshly cracked black pepper, to taste

Optional: toasted pine nuts or walnuts for garnish

Instructions
 

Begin by washing the heirloom tomatoes and peaches. Slice the tomatoes into thick wedges and the peaches into thin slices.

    In a large mixing bowl, combine the sliced tomatoes and peaches. Drizzle with 1 tablespoon of olive oil and season with a pinch of salt and black pepper. Gently toss to combine and allow the flavors to meld for about 10 minutes.

      While the tomatoes and peaches rest, prepare your serving platter by laying down the arugula or mixed greens, creating a bed for the salad.

        After the resting period, arrange the tomato and peach mixture over the bed of greens.

          Carefully tear the burrata cheese into pieces, distributing them evenly over the salad for a creamy touch.

            In a small bowl, whisk together the remaining 2 tablespoons of olive oil and balsamic vinegar. Drizzle this dressing over the salad.
