Ingredients

2 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup shredded mozzarella cheese

1/2 cup fresh basil leaves, chopped

1 medium ripe tomato, sliced

1/4 teaspoon garlic powder

Salt and pepper to taste

Optional: Balsamic glaze for drizzling

Instructions

Prep the Ingredients: Wash and slice the tomato, chop the basil leaves, and set aside.

Prepare the Bread: Spread a thin layer of softened butter on one side of each slice of sourdough bread.

      Assemble the Sandwich:

        - Place one slice of bread, buttered side down, in a skillet over medium heat.

          - Layer half of the mozzarella cheese on top, followed by sliced tomatoes and chopped basil.

            - Sprinkle garlic powder, salt, and pepper over the basil and then add the remaining mozzarella cheese on top.

              - Finally, place the second slice of bread on top, buttered side up.

Grill: Cook for about 3–5 minutes or until the bottom slice is golden brown and the cheese begins to melt. Carefully flip the sandwich using a spatula.

Cook the Other Side: Grill the second side for an additional 3–5 minutes until golden brown and the cheese is fully melted.

Serve: Remove the sandwich from the skillet and let it rest for a minute. If desired, drizzle with balsamic glaze before slicing in half.

Enjoy: Serve warm and enjoy the melty, herby goodness with a side of fresh salad or soup!
