4 large ripe tomatoes

1 cup tomato juice (preferably low-sodium)

1/4 cup fresh lemon juice

2 teaspoons Worcestershire sauce

1 tablespoon sugar

2 tablespoons unflavored gelatin powder (or 3 sheets of gelatin)

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper (adjust to taste)

1/2 cup diced cucumber

1/2 cup diced red bell pepper

1/4 cup finely chopped red onion

Fresh herbs for garnish (basil or parsley)

Instructions
 

Prepare the Tomatoes:

    - Blanch the tomatoes in boiling water for about 30 seconds, then transfer them to an ice bath to cool. Once cool, peel the skins and roughly chop the tomatoes, setting aside the juices.

      Make the Tomato Juice Mixture:

        - In a medium saucepan, combine the tomato juice, lemon juice, Worcestershire sauce, sugar, salt, black pepper, and cayenne pepper. Bring the mixture to a gentle simmer over medium heat.

          Hydrate the Gelatin:

            - In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for about 5 minutes to bloom. If using sheets, soak them in cool water until soft, then squeeze out excess water.

              Dissolve the Gelatin:

                - Once the tomato juice mixture is warm, remove it from the heat. Stir in the bloomed gelatin, ensuring it dissolves completely in the warm liquid.

                  Combine Ingredients:

                    - In a large mixing bowl, combine the diced cucumber, red bell pepper, red onion, and chopped tomatoes. Pour the tomato juice and gelatin mixture over the veggies and gently stir to combine.

                      Set the Aspic:

                        - Pour the mixture into a mold or individual serving cups. Refrigerate for at least 4 hours or until firm.

                          Serve:

                            - To unmold, briefly dip the bottom of the mold in warm water and invert it onto a serving platter. Garnish with fresh herbs before serving.
