2 cups cooked chicken, shredded (preferably rotisserie)

1 cup shredded cheese (cheddar or a Mexican blend)

1/2 cup cream cheese, softened

1/2 cup black beans, rinsed and drained

1/4 cup corn kernels (canned or frozen)

1/4 cup diced bell pepper (any color)

1/4 cup diced red onion

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

Olive oil or cooking spray (for cooking)

Salsa or guacamole for dipping (optional)

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, shredded cheese, cream cheese, black beans, corn, bell pepper, red onion, ground cumin, chili powder, salt, and pepper. Mix until all ingredients are well incorporated.

    Assemble the Rollups: Place a tortilla on a flat surface. Spoon a generous portion of the filling mixture along one edge of the tortilla. Roll up the tortilla tightly, starting from the edge with the filling. Repeat this step with the remaining tortillas and filling.

      Heat the Pan: In a large skillet, heat a tablespoon of olive oil over medium heat. Alternatively, you can use cooking spray for a lighter option.

        Cook the Rollups: Place the roll-ups seam-side down in the skillet. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy. You may need to cook them in batches depending on the size of your skillet.

          Slice and Serve: Once cooked, remove the rollups from the skillet and let them cool for a minute. Slice each rollup into bite-sized pieces. Serve warm with salsa or guacamole for dipping.
