1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (fresh or canned, drained)

1/2 cup diced red onion

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup salsa (mild, medium, or spicy depending on preference)

6 large flour tortillas

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

Fresh cilantro (for garnish)

Sour cream (for serving, optional)

Sliced jalapeños (for serving, optional)

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, red onion, cumin, chili powder, garlic powder, salt, and black pepper. Mix well until the ingredients are evenly distributed.

    Layer the Tortillas: Preheat your oven to 350°F (175°C). In a greased 9x13-inch baking dish, lay down one flour tortilla. Spread a portion of the chicken and black bean mixture over the tortilla, followed by a sprinkle of both cheddar and Monterey Jack cheese.
