2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch ginger, grated

1 tablespoon cornstarch (optional, for a thicker sauce)

For the Bowl:

2 cups cooked jasmine or brown rice

1 cup broccoli florets

1 cup carrots, thinly sliced

1 red bell pepper, sliced

1/2 cup edamame (shelled)

2 green onions, chopped

1 tablespoon sesame seeds (for garnish)

Instructions
 

Prepare the Marinade:

    - In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. If you want a thicker sauce, mix in the cornstarch.

      Marinate the Chicken:

        - Place the chicken in a resealable plastic bag or a shallow dish, and pour the marinade over it. Seal or cover, then refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

          Cook the Chicken:
