1 pound breakfast sausage (mild or spicy, based on preference)

2 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup chopped green onions (for garnish)

Preheat the oven to 425°F (220°C) and bake the frozen tater tots according to package instructions until they are golden brown and crispy. This usually takes about 25-30 minutes.

    Cook the sausage: In a large skillet over medium heat, add the breakfast sausage. Cook, breaking it apart with a spatula until it’s browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving any drippings in the pan.

      Make the sausage gravy: In the same skillet, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes until light golden in color. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently until the mixture thickens, about 3-5 minutes.

        Season the gravy: Add garlic powder, onion powder, salt, and pepper to taste. Stir in the cooked sausage and let it simmer for another couple of minutes to combine the flavors. Remove from heat.
