4 large bell peppers (any color)

1 pound ground beef (or turkey)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning

1 cup cooked rice (white, brown, or cauliflower rice)

1 cup salsa

1 cup shredded cheese (cheddar or Mexican blend)

½ cup chopped fresh cilantro (optional)

1 avocado, sliced (for garnish)

Sour cream (for serving)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish. If needed, you can slice a small piece off the bottom to help them stand straight.

      Cook the Filling: In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked, about 5-7 minutes. Drain excess fat.

        Add Ingredients: Stir in the black beans, corn, taco seasoning, cooked rice, and salsa. Mix well and let it simmer for about 3-5 minutes until heated through.

          Stuff the Peppers: Carefully spoon the taco mixture into each bell pepper, pressing down gently to pack the filling.

            Add Cheese: Sprinkle shredded cheese generously over the tops of the stuffed peppers.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                Garnish and Serve: Once out of the oven, garnish with fresh cilantro and serve with sliced avocado, sour cream, and lime wedges on the side.
