Ingredients

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1/4 cup sweet Thai chili sauce

2 tablespoons soy sauce

1 tablespoon lime juice

2 teaspoons minced garlic

1 teaspoon minced ginger

1 tablespoon sesame oil

1 tablespoon honey (optional, for extra sweetness)

Fresh cilantro, for garnish

Lime wedges, for serving

Skewers (if using wooden skewers, soak in water for 30 minutes before grilling)

Instructions

Marinate the Chicken:

    - In a large bowl, combine the sweet Thai chili sauce, soy sauce, lime juice, minced garlic, minced ginger, sesame oil, and honey (if using). Mix well.

      - Add the chicken pieces to the marinade and coat thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.

        Prep the Grill:

          - Preheat your grill to medium-high heat. If using an outdoor grill, brush the grates with oil to prevent sticking.

            Skewer the Chicken:

              - If using skewers, thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking. Discard any leftover marinade.

                Grill the Chicken:

                  - Place the skewers on the preheated grill. Cook for about 6-8 minutes on each side, or until the chicken is cooked through and you have nice grill marks. The internal temperature should reach 165°F (75°C).

                    Serve:

                      - Remove the chicken from the grill and let it rest for a couple of minutes. Transfer to a serving platter, garnish with fresh cilantro, and serve with lime wedges on the side for squeezing over the top.

                        Enjoy!

                          - These Sweet Thai Chili Grilled Chicken Bites are perfect as an appetizer, snack, or main dish, paired with rice or a fresh salad!
