1 cup fresh strawberries, hulled and sliced

2 tablespoons honey or maple syrup (adjust to taste)

1/2 cup granola (your favorite variety)

Fresh mint leaves for garnish (optional)

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries with the honey or maple syrup. Toss gently to coat the strawberries evenly. Allow them to sit for about 10 minutes to release their juices.

    Make the Chia Pudding: In a separate bowl, whisk together the coconut milk, chia seeds, and vanilla extract. Stir well to ensure there are no clumps. Let it sit for about 5 minutes, then stir again to prevent the chia seeds from settling at the bottom. Allow it to sit for an additional 15-20 minutes, or until it thickens up to a pudding-like consistency.
