1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 small red onion, cut into 1-inch pieces

¼ cup soy sauce

3 tablespoons honey

2 tablespoons sriracha (adjust to taste)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground ginger

Salt and pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together soy sauce, honey, sriracha, olive oil, minced garlic, ground ginger, salt, and pepper. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Prepare the Skewers: While the chicken is marinating, prepare the vegetables. If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Alternate threading chicken, pineapple, bell peppers, and onion onto the skewers.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.

        Grill the Kabobs: Once the grill is hot, place the skewers on the grill. Cook for about 10-12 minutes, turning every 3-4 minutes, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).
