2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

2 cups kale, stems removed and chopped

1 red bell pepper, diced

1 teaspoon smoked paprika

2 large eggs (optional for serving)

Fresh parsley, chopped (for garnish)
