Sweet Potato and Kale Gratin

2 large sweet potatoes, peeled and thinly sliced

4 cups fresh kale, stems removed and roughly chopped

1 cup heavy cream

1 cup shredded Gruyère cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup breadcrumbs (optional for added crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Kale: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped kale and garlic, sauté for about 5-7 minutes, or until the kale has wilted down and softened. Season with salt, pepper, and thyme. Remove from heat and set aside.

      Mix the Cream: In a mixing bowl, combine the heavy cream, nutmeg, and half of the Gruyère cheese along with the grated Parmesan. Season with salt and pepper to taste.

        Layer the Gratin: In a greased 9x13 inch baking dish, start by layering half of the sweet potato slices evenly across the bottom. Pour half of the cream mixture over the potatoes, followed by half of the sautéed kale. Repeat the layering process with the remaining sweet potatoes, cream mixture, and kale.

          Top with Cheese: After layering, finish with a generous sprinkle of reserved Gruyère cheese on top. If using breadcrumbs, sprinkle them evenly over the cheese for a crunchy topping.

            Bake: Cover the baking dish with aluminum foil (shiny side down) to trap moisture. Bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the gratin is bubbly and the top is golden brown.

              Cool and Serve: Allow the gratin to cool for 5-10 minutes before serving to let it set. This dish pairs well with a light salad or roasted protein.
