Ingredients

3 ripe peaches, diced

1 medium red bell pepper, diced

1/2 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spiciness)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey or agave syrup

Salt and pepper to taste

Instructions

Prepare the Ingredients: Start by washing and dicing the peaches, red bell pepper, jalapeño, and red onion as indicated above. Make sure to remove the pits from the peaches and seeds from the jalapeño for a smoother salsa.

Combine in a Bowl: In a large mixing bowl, add the diced peaches, red bell pepper, red onion, jalapeño, and chopped cilantro.

Add Seasoning: Squeeze the juice of one lime over the mixture. This will add a zesty flavor while also helping to preserve the color of the peaches. Drizzle the honey (or agave syrup) over the salsa for a hint of sweetness.

Mix Thoroughly: Gently toss all the ingredients together until everything is evenly combined. Be careful not to mash the peaches; you want to maintain a chunky salsa texture.

Season to Taste: Sprinkle salt and pepper over the salsa, adjusting the amounts to your preference.

Chill and Serve: For the best flavor, cover the bowl with plastic wrap and let the salsa chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully. Serve with tortilla chips, grilled chicken, or fish.
