½ cup granulated sugar

2 tablespoons poppy seeds

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large lemon (zest and juice)

½ cup plain Greek yogurt

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

½ cup powdered sugar (for glaze)

2 tablespoons lemon juice (for glaze)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, poppy seeds, baking powder, baking soda, and salt until well combined.
