Sweet Corn & Zucchini Salad

Ingredients
  

2 cups fresh sweet corn (or 1 can of drained corn)

2 medium zucchinis, diced into small cubes

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh basil leaves, torn

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey or agave syrup

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for some heat

Instructions
 

Prepare the Corn: If using fresh corn, shuck the ears and remove the kernels by slicing down with a knife. If using canned corn, simply drain and rinse it.

    Sauté the Zucchini: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced zucchini and sauté for about 5-7 minutes, until they are tender but still have a bit of crunch. Season with a pinch of salt and pepper. Remove from heat and let cool slightly.

      Mix the Salad: In a large mixing bowl, combine the sautéed zucchini, fresh sweet corn, cherry tomatoes, red onion, and torn basil leaves.

        Prepare the Dressing: In a small bowl, whisk together the remaining 2 tablespoons of olive oil, apple cider vinegar, honey, salt, pepper, and red pepper flakes (if using) until well combined.

          Combine: Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

            Add Feta (Optional): If using, gently fold in the crumbled feta cheese for an extra creamy layer of flavor.
